Tuvar Sabzi

1 Baigan (Aubergine/Brinjal)
1 Small cup Nikasu Tuvar Lilva
1 Small cup Nikasu Papdi lilva
4 garlic cloves
Small piece of ginger
1 tomato
1 tsp coriander powder
1/2 tsp chilli powder
1/2 tsp turmeric powder
Salt to taste
3 tsp sugar
1/2 tsp amchoor (mango) powder
1 big tsp of oil
1/2 mustard seeds

Method:-

In a pressure cooker, pour some oil. When hot, add some mustard seeds. Once it starts cracking add garlic and ginger. When it is slightly brown add tuvor and papdi lilva. Cut Baigan into small pieces and add that as well. Put all the masala’s and sugar and salt. Add small pieces of tomato. Add a little water. Mix well and wait until 3 whistles. Put some fresh coriander leaves and serve with chapathis, Parathas or Naan.
